How much salt is hidden in your food?

Most salt does not come from your salt shaker but from bread, cheese and ready-made food. Take the source check and see where your gains are.

Short answer Most people take in about twice what is recommended: the World Health Organization advises less than 5 grams of salt a day, and the global average for adults was around 11 grams in 2021 [14]. Roughly three quarters of it is already inside products before you sprinkle anything yourself: bread, cheese, cold cuts, soup, sauces and ready meals. Eating less processed food and cooking yourself more often therefore lowers your salt intake far more than leaving the salt shaker alone. With elevated blood pressure that yields an indicative 4 to 6 mmHg less systolic pressure; without elevated blood pressure the effect is smaller (about 2 to 3). Why your salt shaker is not the culprit

When people think of too much salt, they think of sprinkling. But self-added salt (cooking plus table) is only some 10 to 15 percent of intake; the vast majority is already inside manufactured products. The treacherous part: the biggest sources do not even taste distinctly salty. One slice of bread seems harmless, but six slices a day make bread a main source. If you want to help your blood pressure, you gain more from more vegetables and potassium and fewer processed products than from banishing the salt shaker.

Bread. Not because bread is extremely salty, but because we eat so much of it. That is exactly why reducing salt through product choices works better than willpower at the table: you change one purchasing decision and profit from it every day.

What does it deliver?

With elevated blood pressure, sustained moderate salt reduction gives an average of just over 5 mmHg less systolic pressure (indicatively 4 to 6); without elevated blood pressure it is 2 to 3. The effect grows with the size of the reduction and with your salt sensitivity, which increases with age and weight. And it does not simply stack with other measures: those who eat better automatically take in less salt.

Salt reduction lowers blood pressure Strong

The Cochrane analysis by He and MacGregor found that sustained moderate salt reduction gives an average systolic reduction of just over 5 mmHg in hypertension and 2 to 3 mmHg without hypertension [1]. A dose-response analysis across experimental studies shows the reduction grows with the size of the sodium reduction, including within common intakes [2]. Dutch guidance uses a maximum of 6 grams of salt per day, the WHO less than 5 grams [3,4].

Most salt is hidden Moderate

Classic source research attributed only some 10 to 15 percent of intake to self-added salt (cooking plus table); the vast majority, on the order of three quarters, was already in processed products [5]. That research is American and dated, but national food consumption surveys point the same way: bread, (processed) meat, cheese, sauces and soups together supply the majority [6].

Potassium-based salt substitutes: fewer strokes and deaths Strong

In the SSaSS trial (nearly 21,000 participants with a history of stroke or poorly controlled blood pressure), salt in which a quarter of the sodium was replaced by potassium gave 14 percent fewer strokes and also lower mortality [7]. Caveat: the population was selected and mostly ate home-prepared food; with kidney disease or potassium-sparing medication, consult your doctor first [10].

Less salt, fewer cardiovascular events over time Moderate

Observational follow-up of the TOHP trials showed fewer cardiovascular events after earlier salt reduction [8], and the systematic review by Aburto supports the chain from lower intake to lower blood pressure to lower risk [9]. Direct randomised endpoint evidence beyond SSaSS remains limited.

The scientific debate, stated honestly Limited

Cochrane analyses by Graudal show that very strict short-term sodium restriction can also raise renin, aldosterone and lipids; the clinical meaning of that is contested [11]. Observational cohorts (PURE) suggested a J-shaped association in which very low intake also correlated with risk, but the measurement method (a single urine sample) and reverse causality are widely criticised [12,13]. The guidelines stand: moderate your intake towards 5 to 6 grams; extreme restriction is not the goal [3,4].

What the guidelines say Moderate

The World Health Organization advises adults to stay below 5 grams of salt a day, and reports a global average of around 11 grams in 2021 [14]. We do not depart from that advice. What we add is where the salt comes from, because the guidelines do not work that out and the difference between the salt shaker and the shopping trolley decides whether someone gets there. On safety we follow the guidelines without exception: a blood pressure that stays high on repeated measurement belongs with a doctor, and nobody changes their medication on their own. With repeatedly measured values at or above 180 mmHg systolic or 120 mmHg diastolic: get assessed medically without delay; contact a doctor immediately in case of chest pain, breathlessness, sudden neurological loss, confusion, severe headache, loss of vision or other serious symptoms. Frequently asked questions

How much salt can I have per day?

Most guidelines advise at most 5 to 6 grams of salt per day (about one level teaspoon); the World Health Organization says less than 5 grams. Most people are well above that, mainly through processed products.

Is sea salt or Himalayan salt healthier than regular salt?

No. The active part is sodium, and the amount is virtually the same. Prettier colours and crystals change nothing; only less sodium helps your blood pressure.

Are potassium-based salt substitutes a good idea?

Often, yes: in a large randomised trial, salt in which part of the sodium was replaced by potassium led to fewer strokes and deaths. But talk to your doctor first if you have kidney disease or use medication that retains potassium.

How soon will I notice anything from eating less salt?

With elevated blood pressure, often within two to four weeks; measure at home following a protocol during that period. Your taste adapts too: after a few weeks, salty food tastes sharper again.

Does drinking lots of water flush out salt?

No. Your kidneys regulate the salt balance; extra water does not change your sodium intake. The only route is taking in less salt, mainly from processed products.
